The best piece of music in the series, in my opinion, is Assault's end credits theme.

While I wasn't fond of it at first, Star Fox 64's soundtrack has grown on me tremendously in the past few years. I still don't like it quite as much as the SNES game's music, but it still has some stand out themes like Star Wolf, Area 6, Sector X, Katina, and as ArwingFan mentioned; Zoness. Star Fox Assault's orchestrations of some of the N64 music help me appreciate it more so.
