I'm at the stage where I actually (*GASP*) LEARN from it! but seriously, I still like to blow sh!t up. That's why I have Strike Fighters 2! (see pic)I have the game, but it's not really enjoyable unless you have a joystick, it just doesn't feel right with a mouse, too bad the throttle/joystick pair I want is 80$ on amazon. I gave this one game called "Ace of Aces" a try, it's not really that good, a bit too slowly paced for a "flying action" game. And we can't forget about Stealth ATF. There are many of great add ons for Microsoft Flight Simulator which give a simulation of one certain airplane with nearly ALL systems like flight management system, autopilot, navigation database, internal airplane systems etc. You can really learn how to handle this systems so you probably could fly the real airplane.
