These chocolate chip cookies bake up rather bulky, similar to Mrs. Field's Cookies. The dough itself is very flavorful, making fabulous cookies even if you bake them plain without chips (though you probably want chips anyway).All primary measurements are imperial measurements. I've added additional metric measurements, but I haven't tested them. Makes 12 cookies. The dough can be frozen for batches much later. As with most cookies, the glycemic index is high, so people with diabetes should use discretion before deciding whether to eat them.½ cup (120 milliliters) sugar½ cup (120 milliliters) brown sugar½ cup (120 milliliters) presoftened unmelted butter (not in the microwave!)1 egg½ teaspoon (2.5 milliliters) baking soda½ teaspoon (2.5 milliliters) baking powder½ teaspoon (2.5 milliliters) salt½ teaspoon (2.5 milliliters) vanilla extract¾ cup (180 milliliters) flour1½-1¾ cups (360-420 milliliters) quick oatslots of chocolate chipsQuick oats are preferred, keeping with the oaty nature of these cookies. But if you absolutely cannot obtain quick oats, a friend of mine from Spain has substituted crushed cornflakes with satisfactory results.Bake at 375-400°F (or approximately 200°C) for 6-8 minutes. Do not overbake. Texture should be like hot mud, so let them cool on the pan just until they are solid enough to move without disintegrating. Then, transfer cookies to a clean flat dry paper surface to cool off completely - brown grocery bag paper will suffice. Paper towels are probably inappropriate, as the cookies will settle into their non-flat texture and become more difficult to remove from the paper when they are cool.If any of you bake these, return here and tell us how it went, and your opinion of the cookies. I was just curious if anyone had baked them after a day or two. Also, I wasn't entirely sure if the thread had been noticed by a lot of people - it was a morning thread on a Friday.
